Los callos con tomate es una comida que en mi casa siempre he comido. Son muy sencillos de cocinar. Hago mucha cantidad así los congelo por separado en táper . Lo saco cuando nos apetece.   2. Ahora pones una olla con agua, sal y las hojas de laurel. Cuando empiece a hervir añade los callos. Si los has comprado ya cocidos hierve 10 minutos. Si no es así, cuécelos el tiempo necesario. Sabiendo que tienen que quedar un poco al dente.
  3. En una cazuela amplia pon aceite de oliva, tiene que cubrir el fondo de la cazuela. Cuando esté tibio el aceite añades el ajo triturado, sofríe un poco. Ahora añades la cebolla con la cayena, dórala. Una vez hecho esto añades el tomate triturados sin la piel. Condimenta con sal y pimienta negra al gusto.
  4. Añade al sofrito los callos escurridos con una rasera (así caerá un poco de caldo de la cocción de los callos). Ahora toca echar el vaso de vino. Déjalos cocer 30 minutos a fuego medio moviéndolo de vez en cuando.
  5. En la misma agua de los callos escalda la capipota 5 minutos.
  6. Cuando los callos ya esté en su punto de cocción, añádele la capipota escurrida con la rasera. Ahora puedes rectificar de sal y pimienta. Déjalo cocer todo juntos 15 minutos a fuego medio. Apagas el fuego, dejas reposar antes de servirlos bien calientes.
