  1. 1 Pierna o paletilla de cordero (yo he usado las dos)
  2. Manteca de cerdo
  3. 120 ml vino blanco
  4. 50 ml vinagre (de vino o de manzana)

  1. Coloca la pierna y la paletilla de cordero en una fuente (preferiblemente de barro) y úntalas con la manteca de cerdo. Lo mejor es hacerlo con las manos y masajeando por toda la superficie.
  2. A mí me gusta ponerle este ingrediente porque deja un acabado mucho más crujiente y dorado.
  3. Al cabo de ese tiempo saca la fuente del horno y da la vuelta al cordero dejando otros 15 minutos por el otro lado a la misma temperatura.
  4. Una vez bien embadurnadas las piezas con la manteca, introduce la fuente en el horno a 150ºC solo durante unos 15 o 20 minutos, simplemente para que tome un poco de colorcito.
  5. Saca la bandeja del horno y mezcla el vino blanco con el vinagre. Riega todo el cordero con este líquido y vuelve a introducir la fuente en el horno, pero esta vez baja la temperatura a 120ºC y cocina durante una hora y media aproximadamente rociando entre medias un par de veces con la propia salsa por encima para que no se reseque demasiado.
  6. Al cabo de la hora y media si ves que ya está doradito saca el cordero y prácticamente ya lo tienes hecho, lo único que queda es darle un último golpe de horno para darle el toque crujiente.
  7. Para ello subimos la temperatura a 180ºC (incluso puede ser a 200ºC) y lo introducimos de nuevo unos 10 o 15 minutos. De esa forma ya tendremos un cordero asado con un aspecto dorado y crujiente por fuera y tierno y jugoso por dentro.
