A mi niña Erica, el arroz le gusta hasta en la cabeza de un tiñoso y como igualmente es embajadora de la comida saludable. He optado por preparar esta sabrosa paella de arroz con verduras y garbanzos. Se trata de un plato muy característico en la zona de Alicante, donde además le añaden carne de pollo y conejo. En mi caso he prescindido de la carne, y he optado por la versión más saludable, más vegana, con mucho aroma, sabor y colorido.

- Incorporar las hebras de azafrán y los garbanzos cocidos, mezclar y dejamos cocinar todo junto unos quince minutos. Incorporar el arroz, mezclamos y cuando vuelva a hervir introducir en el horno precalentado a 200°C en bandeja del centro con aire, cocer 18 minutos. Sacar y dejar reposar 5 minutos antes de servir. ¡ A Disfrutarlo !
