  1. Lo primero que hay que hacer es el ROUX con la manteca y harina. Esto se hace al derretir la manteca sobre una sart茅n a fuego medio, agregar la harina y mezclar hasta que se haga una pastita. Dorar esa pastita por 2-3 minutos e ir agregando de a poco la leche y seguir mezclando. Es esencial agregar la leche de a poco, ya que si la vertemos de una sola vez, la pastita no se disuelve y se crean grumos.
  2. Una vez que hicimos el proceso anterior, lo que conseguimos es una salsa tipo bechamel. Condimentar la salsa a gusto.
  3. Ir agregando los quesos de a partes. Yo primero le agrego el cheddar, que en mi caso lo consegu铆 tipo crema, luego la muzzarella y por 煤ltimo el queso duro.
  4. Mientras los quesos se derriten, hervir los fideos en agua con sal.
  5. Cortar la panceta en cubitos y dorarla en una sart茅n unos minutitos.
  6. Una vez que los fideos est茅n listos, colarlos y agregarlos a la salsa para que se embeban en ella. Lo mejor es utilizar fideos cortos texturados tipo codito para que la salsa se adhiera mejor.
  7. Ahora servir. Agregar la panceta de decoraci贸n (opcional), y disfrutar.
