Para ello, poner dos dedos de agua en una cacerola con una pizca de sal, llevar al fuego y cuando el agua comience a hervir, meter las 4 hojas de repollo, tapar la cacerola y dejar durante 3 minutos máximo. Retirar del fuego, escurrir y reservar.
  4. Pelar la zanahoria y rallarla, pelar la media cebolla y cortarla en finas láminas, pelar el mango y trocearlo, cortar las hojas de repollo en finas láminas también, pelar el aguacate en láminas rociándolo con zumo de lima para que no se oxide, escurrir el bote de alubias y lavarlas bajo el chorro de agua. Reservar.
  5. Poner la quinoa ya cocida en un bol, mezclar con la salsa. Por encima las verduras, legumbres y frutas. Rociar el conjunto con un hilito de aceite de oliva y decorar con las semillas de sésamo. Ideal para llevar en un tuper al trabajo 😉
