- 100 gr judías o porotos verdes
- 1 zanahoria mediana
- 1 cebolla morada mediana
- 1/2 pimiento morrón
- 1 tomate mediano

- Saltear los zapallitos italianos, el morrón, el tomate y la cebolla morada en unas 2 o 3 cucharadas de aceite de oliva. Retirar y reservar.
- Escurrir las verduras cocidas al agua (reservar el caldo). Saltear en la misma sartén donde salteamos las verduras crudas. Reservar. Quitar la piel a las papas cocidas. Dorar con un poco aceite de oliva y mantequilla. Reservar.
- Para montaje, en un plato grande ovalado ponemos una cama de las verduras cocidas con dos papas separadas una de otra. Encima vamos intercalando rodajas de tomate-zapallito italiano-cebolla morada- morrón-cebolla morada y encima una rodaja de zapallito italiano. Pinchamos con un mondadientes.
